Denomination: White Wine Sicilia I.G.T
Grapes: 70% Insolia and 30%
Viognier, grown around
Partinico at about 300
meters above sea level.
The vines are Guyot
pruned with a density of
about 4000 vines per
hectare.
Vinification and ageing: The
grapes are soft-pressed
and fermented at
controlled temperature
in stainless steel tanks;
the wine is aged “surlie”
with monthly
“batonnages” for about
five months.
The grapes are crushed and
destemmed and the must is fermented
at controlled temperature in
stainless steel tanks with
frequent “pumping-over” and
delestages for 8 days; the
wine is then aged for about
6 months in stainless steel
tanks.
Alcohol content: 13% by vol.
Description: The nose
reveals notes of white
peach, wild herbs and
flowers; on the palate is
fresh, fragrant and sapid
How to serve: Open
just before consumption
and serve at a
temperature between 9
and 10°C.
