Vinification The grapes are crushed and destemmed; the juice is clarified through settling cold overnight and then inoculated with selected pure yeast. The fermentation and ageing is carried out in 225-litre French oak barrels, 50% new and 50% one year old

Ageing potential To be drunk immediately or to be kept up to 6-8 years
Soil type ULMO: from shallow to very deep soil, medium texture: good presence of stones, slightly calcareous with sections of deep vegetable matter. DISPENSA: shallow soil, average limestone, with a good section of yellow and dark-grey clay; moderate fine texture, not much presence of stones.
TASTING NOTES  
Colour Golden yellow with bright greenish hue.
Nose Rich, intense, fruity. Peach mousse, black figs, rose, vanilla cream. Overtones of hazelnut with a hint of orange blossom honey. The wood is delicate and hidden beneath the fruit fragrances
Palate Soft, strong, round. Its wonderful balance is held by a powerful streak of acidity, aided by richness of mineral salts and consistency of extracts

Ideal service temperature 14 – 16° C
Food pairing suggestion Trenette al cartoccio (oven cooked pasta wrapped in an aluminium foil), Ravioli (pasta) with rhombus fish and lemon sauce, hand made Tagliolini (pasta) with truffle, boiled beef. After some years of bottle ageing, drink it with mouldy or mature cheese
Sicilian cookery Fish soup, Cacio all'argentiera (fried caciocavallo cheese with vinegar and oregano), fish soup, pasta with ricotta cheese and black pepper, risotto with artichokes, sweetbreads in the skillet/on skewer .
