Production zone: Faro Superiore village, Messina, north – eastern Sicily.
Grape varieties: 60% Nerello Mascalese, 30% Nerello Cappuccio, 10% Nocera.
Altitude: 250 metres above sea level.
Soil type: medium misture characterised by clay layers and tuff calcrete.
Planting density: 5000 stocks per hectare.
Type of plant breeding: tree form and shoulder loop form.
Yeald: 60 q.li/Ha.
Vintage: in the middle of October. Fermentation temperature: 26° – 28°C. Length of aging: about 10 months in oak barrels of different sizes and ages, 4 months in bottles.
Only a few thousand bottles of FARO D.O.C. BONAVITA are produced: this deep, ruby red wine, in time, develops burgundy highlights. It is medium full-bodied and tannic. Its characteristic wine fragrance recalls red ripe fruit, cherries in particular, with light spicy notes. It perfectly agrees with hearty first dishes, barbacued red meat, but also with “pescestocco a ghiotta” and “sarde a beccafico”, typical sea-food dishes, and with “maiorchino cheese” and “the Nebrodi mountain black pig”, that all belong to the Sicilian gastronomy.
