Harvest period

harvest grapes (a 20 di Babo) on August 25th; followed by grapes overmaturation

Vinification the grapes are crushed and destemmed; the juice is clarified through settling cold overnight and then inoculated with selected pure yeast. Fermentation and ageing in stainless steel tanks.

Ageing potential Long, as for all sweet wines. Improves with time.
Soil type
calcareous limestone soil, plenty of small size stones; fine texture with fraction of light coloured clay.
TASTING NOTES  
Colour Bright golden yellow
Nose Dense notes of dried apricots, mango, orange peel, plums, dates, pistacchio and vanilla cream. Citrus jam. Fruity flavour is blended with Darjeeling tea aromas, mimosa and orange blossom flowers, ginger and sesame seeds. All typical fragrances of Sicilian confectionery/cakes
Palate
Sweetness predominates with grace on alcoholic and acid components. The wine runs creamy and dense and thick, almost with difficulty. Thanks to its lively acidity it has a voluptuous and pleasingly lingering finish in the mouth

Ideal service temperature 12 – 14 °C
Food pairing suggestion baked apples in orange sauce. Small cakes, fruit tarts, vanilla –flavoured Bavarian cake, plum cake.
Sicilian cookery Typical cakes made by nuns, baked cassata, citrus gelées.
