Soil type ULMO.From shallow to very deep soil, medium texture: good presence of stones, slightly calcareous with sections of deep vegetable matter. GURRA: The clay and calcareous soil highlights.DISPENSA: shallow soil, average limestone, with a good section of yellow and dark-grey clay; moderate fine texture, few stones.
TASTING NOTES  
Colour Straw yellow with light greenish hue.
Nose Broad and lively aromatic bouquet. Fruity and fragant; apple, citrus, white melon, tropical fruit and lime.
Palate Fresh and flavoursome. Good balance between acidity, suppleness and fullness. Aromatic finish.

Ideal service temperature 10 – 12°C
Food pairing suggestion Excellent as an aperitif, energetic match with raw dishes (seafood and meat), lightly fried food and all types of salad. Party wine, ideal for young, creative cuisine.
Sicilian cookery Panelle (deep-fried chickpea pancakes) and rice balls. Ideal with shellfish, octopus, mussels, clams, limpets, sea urchins and crab typical of the Sicilian coast. Speghetti with fresh fish roe and cherry tomatoes. Sardine allinguate.
